Instead of stirring, it's beaten vigorously by hand (or whisk) for several minutes until the mixture transforms into a thick, pale, almost mousse-like foam. That foam is then spooned over hot or cold milk, creating the signature two-tone look KAAFII's coffee is known for.
Why Does It Taste Different?
The beating process incorporates air into the coffee-sugar mixture, which mellows the bitterness and creates a light, almost dessert-like texture on top of a strong coffee base underneath.
